This salad needs to marinate for at least 6 hours or overnight.

Ingredients

tablespoons fresh lemon juice

  • 4 large carrots, grated, approx. 3 cups

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon honey

  • 1/4 cup chopped fresh parsley

  • fine sea salt

  • freshly cracked pepper
