In the summer months, when fresh lettuce is available from our garden or our local farmer’s market, I stay away from vacuum packed lettuce. Fresh lettuce needs to be stored properly otherwise they will just turn into limp and soggy leaves. Fill your sink with cold water, add lettuce pieces; let sit a few minutes. Gently swish around the greens and drain into a colander. Place in a salad spinner or pat dry on a clean tea towel. Place them in a large glass container, fitted with a tight lid that has been lined with a paper towel. You can store them for up to two weeks. No container? A plastic bag works but just no longer than 5 days.
